These carrot cheese crackers are our favorite ones lately. They are super easy to make and yummy. If you are looking for something to grab and go, these are the right ones, together with some vegetable sticks are perfect for afternoon snack.
Carrot - cheese crackers

Ingredients
100 g of fine shredded carrot
100 g of softened unsalted butter
100 g of fine shredded cheese (Pecorino cheese or Parmesan cheese)
100 g spelt flour
Instructions
Put all ingredients to a bowl.
Mix well together to get one dough.
Place the dough in a storage container, close it and refrigerate it for about hour.
After the dough is chilled, roll it out on a well floured surface. If you need to, dust the flour a little more flour along the way.
Don`t worry about the shape, because the next step is to cut out strips, then turn the cutter and cut across to get rectangles.
Pre-heat the oven on 175 Degrees.
